Chalet 1802 Wines

Wine buffs also have a treat in store as we take our wine just as seriously as our cuisine. We could save ourselves some money by offering a more mundane selection of wine, but we see fine, and often unusual, vintages as being integral to the Chalet 1802 experience; and our house wines gain new admirers with every visit.

We have a selection of three paired wines, all from quality domains in France, from which to choose to accompany dinner. And, of course, we serve free, unlimited quantities of wine with your meal.

Champagne

Our house champagne this year is Maison Cattier. The Champagne House Cattier has been creating exceptional wines for almost one century. Their vineyards stretch for more than 20 hectares mainly classified as "Premier Cru". All the wines are aged for at least three-four years before release, adding complexity and richness to their underlying elegance. The brut 1er Cru is mineral, delicate and fruity.

White Wines

Domaine Astruc (Limoux) Domaine Astruc consists of 50 hectares on the "Coteaux Limouxin" of which 11 hectares are within the Limoux Appellation d'Origine Controlée and the other 39 hectares within the Vin de Pays d'Oc Appellation. It has built its reputation thanks to its unique soils and climate. Since 1802, Domaine Astruc has been renowned for the high quality of its wines. The Sauvignon Blanc 2005 is fresh and zesty with good weight on the palate.

Domaines Paul Mas (Vdp d’Oc) Jean Claude Mas is one of the modern brigade of French winemakers in the Languedoc. He makes stylish, vibrant wines which have one foot firmly in the local soils, the other turned towards the styles of the new world. Les Domaines Paul Mas is one of the largest domains in the Languedoc but quality is never compromised by its sheer size. Highly drinkable, true to its origins and blessed with a touch of class. The Chardonnay La Forge Estate 2005 is rich and impressive with a burgundian complexity. The Viognier/Chardonnay Les Vignes de Nicole 2005 is nicely perfumed and complex with plenty of depth and weight for a wine.

Red Wines

Domaines Paul Mas (Vdp d'Oc) The La Forge wines are superb, rich and intense with great length. The La Forge Merlot is a refined wine, velvety and rich. Whilst The La Forge Cabernt Sauvignon is both fruity and persistant with a good structure. The Cabernet Sauvignon/Syrah Les Vignes de Nicole 2005 offers a beautiful aromatic complexity and on the palate is velvety and harmonious with plenty of character and a long finish with liquorice flavours.
